SOUTHERN HIGHLANDS COUNTRY WEDDINGS
CHOOSE THE BEST quality sparkling wines or
champagne for your guests. Sparkling wine and
champagne are a must for your wedding reception and
choosing the right one will make your party swing.
Champagne is so-called as it hails from that region in
France. There is a big difference between the flavours
and style of Champagne and sparkling wine and of
course, a difference in price.
Champagne grapes grow in cold, almost marginal
conditions on chalky soil. This gives the grapes a
distinctive mineral flavour and fresh acidity. The end
result is a lightly bubbling drink that has a delicate
mousse on the top of the glass, and tiny beads of
trapped carbon dioxide that travel upwards in a row to
the top of the glass..
The action of these bubbles is due to the length of time
the wine has spent in the bottle fermenting. As each
yeast cell dies off, it leaves behind a trapped air-bubble.
The longer the wine is in the bottle, the finer the bead or
bubbles and the more delicate the Champagne will be.

Due to the long time that the wine spends in the bottle,
the uncertainty of a good vintage and the expense
involved in production, Champagne can be expensive.
In Australia and in particular the Southern Highlands, where
our cooler climate allows the grapes to retain
freshness and flavour, sparkling wine is made at
many wineries in the region. Using exactly the
same method as they do in Champagne, the wine
produced may be less expensive and have the
same delicate beads in the glass.
Whatever you choose for you and your guests,
make sure you choose a trusted brand. Most
sparkling wine is bottled under cork, and the quality of
the cork is paramount to ensure there are no nasty smells
coming out of the bottle when toasting the happy couple.
When calculating how many bottles you will need for
you reception, divide the number of adults who will be
drinking by six. Remember to add that extra one for
you and your hubby when all the guests have
